These refreshing mango popsicles are a perfect way to cool down on a hot day. Made with ripe mangoes, coconut milk, and a hint of lime, they are deliciously tropical and easy to make!


Ingredients

  • 2 large ripe mangoes
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons honey or agave syrup
  • a pinch salt

Instructions

  1. Peel and chop the mangoes, then place them in a blender.
  2. Add the coconut milk, lime juice, honey (or agave syrup), and a pinch of salt to the blender.
  3. Blend until smooth and creamy.
  4. Taste the mixture and adjust sweetness if necessary.
  5. Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion.
  6. Insert sticks into the molds and freeze for at least 4-6 hours, or until completely solid.
  7. To remove the popsicles, run warm water over the outside of the molds for a few seconds until they release.
