Scale
- 4 ripe mangoes, peeled and diced
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) water
- 1 tablespoon lime juice
- A pinch of salt
Instructions
- In a medium saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves completely. Remove from heat and let cool.
- In a blender, combine the diced mangoes, cooled sugar syrup, lime juice, and a pinch of salt. Blend until smooth.
- Pour the mango mixture into a shallow dish and freeze for about 1-2 hours, or until the edges start to freeze.
- Using a fork, scrape the mixture to break up any ice crystals. Return to the freezer and freeze for another 2-3 hours, or until fully set.
- Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly. Scoop and enjoy!
