- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sun-dried tomatoes and cook for 2 minutes. Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese, salt, and pepper. Cook until the sauce thickens slightly, about 3-5 minutes.
- Return the shrimp to the skillet and toss to coat in the creamy sauce. Cook for an additional 2 minutes.
- Remove from heat and stir in the fresh basil before serving.
