- 2 New York Strip steaks (1 inch thick)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary or thyme
- 1 tablespoon butter
Instructions
- Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes.
- Preheat your oven to 400°F (200°C).
- Pat the steaks dry with paper towels. Season both sides generously with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- Add the steaks to the skillet and sear for 4-5 minutes without moving them until a golden-brown crust forms.
- Flip the steaks, add the minced garlic, fresh herbs, and butter to the pan.
- Spoon the melted butter over the steaks for about 1 minute.
- Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until your desired doneness is reached.
- Remove from the oven and let the steaks rest for 5 minutes before slicing and serving.
