A delicious and creamy one pot dish featuring orzo pasta, sun-dried tomatoes, spinach, and a rich sauce.

- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sun-dried tomatoes, cooking for another 2 minutes until fragrant.
- Pour in the vegetable broth and heavy cream, and bring the mixture to a simmer.
- Stir in the orzo pasta and Italian seasoning. Reduce heat to medium-low and cover, cooking for about 10 minutes or until the orzo is al dente.
- Add the fresh spinach and stir until wilted. Season with salt and pepper to taste.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil.
Notes
- For a lighter version, you can substitute heavy cream with half-and-half or a plant-based cream.
- Feel free to add protein such as grilled chicken or shrimp for a heartier meal.
