Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and sun-dried tomatoes, cooking for another 2 minutes until fragrant.
  3. Pour in the vegetable broth and heavy cream, and bring the mixture to a simmer.
  4. Stir in the orzo pasta and Italian seasoning. Reduce heat to medium-low and cover, cooking for about 10 minutes or until the orzo is al dente.
  5. Add the fresh spinach and stir until wilted. Season with salt and pepper to taste.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil.

Notes

  • For a lighter version, you can substitute heavy cream with half-and-half or a plant-based cream.
  • Feel free to add protein such as grilled chicken or shrimp for a heartier meal.
