Ingredients

  • 2 Large onions (Vidalia or sweet onions work best.)
  • 1 cup All-purpose flour
  • 1/2 cup Cornstarch (For extra crispiness.)
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 Egg (Beaten.)
  • 1 cup Milk
  • 2 cups Breadcrumbs (Panko breadcrumbs for extra crunch.)
  • for frying Vegetable oil

Instructions

  1. Peel and slice the onions into 1/4 inch thick rings. Separate the rings and set aside.
  2. In a bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper.
  3. In another bowl, whisk together the beaten egg and milk.
  4. Dip each onion ring into the flour mixture, then into the egg mixture, and finally coat with breadcrumbs.
  5. Heat vegetable oil in a deep pan over medium-high heat.
  6. Fry the onion rings in batches until golden brown, about 2-3 minutes per side.
  7. Remove the onion rings and drain on paper towels. Serve hot.

Notes

  • For extra flavor, you can add garlic powder or paprika to the breadcrumb mixture.
