- 8 ounces pasta (fusilli or penne recommended)
- 1 cup sun-dried tomatoes, chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/3 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, sun-dried tomatoes, black olives, feta cheese, red onion, basil, and parsley.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
Notes
- Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
