Description
A refreshing summer salad featuring sweet peaches, peppery arugula, and a light honey dressing.
Ingredients

- 4 cups arugula, washed and dried
- 2 ripe peaches, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted walnuts, chopped
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the arugula and peach slices.
- Sprinkle the crumbled feta cheese and toasted walnuts over the top.
- In a small bowl, whisk together honey, olive oil, apple cider vinegar, salt, and pepper until well combined.
- Drizzle the honey dressing over the salad just before serving.
- Toss gently to combine and serve immediately.
Notes
- Feel free to substitute goat cheese for feta if desired.
- Add grilled chicken or shrimp for extra protein.
