- 1 pound chicken breast, sliced into thin strips
- 1 cup fresh pineapple, diced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
- In the same pan, add garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add bell pepper, broccoli, and carrot. Stir fry for about 3-4 minutes until vegetables are tender-crisp.
- Return the chicken to the pan and add the diced pineapple and sauce mixture. Stir well to combine.
- Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
- Season with salt and pepper to taste, and serve over cooked rice.
Notes
- Feel free to substitute or add any vegetables you like, such as snap peas or zucchini.
- For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
