Ingredients

  • 1 pound chicken breast, sliced into thin strips
  • 1 cup fresh pineapple, diced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, combine soy sauce, oyster sauce, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
  4. In the same pan, add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  5. Add bell pepper, broccoli, and carrot. Stir fry for about 3-4 minutes until vegetables are tender-crisp.
  6. Return the chicken to the pan and add the diced pineapple and sauce mixture. Stir well to combine.
  7. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
  8. Season with salt and pepper to taste, and serve over cooked rice.

Notes

  • Feel free to substitute or add any vegetables you like, such as snap peas or zucchini.
  • For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
