- 1 cup shelled pistachios, finely ground
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 1/2 cup coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder for dusting
- Chopped pistachios for garnish
Instructions
- In a large mixing bowl, combine the ground pistachios, mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until smooth and creamy.
- In a shallow dish, mix the brewed espresso and coffee liqueur (if using).
- Dip each ladyfinger into the espresso mixture for just a second, ensuring not to soak them.
- Layer half of the dipped ladyfingers in the bottom of a 9×9 inch dish.
- Spread half of the pistachio mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust with cocoa powder and garnish with chopped pistachios.
Notes
- For a richer flavor, use freshly brewed espresso.
- You can adjust the amount of sugar based on your sweetness preference.
