Ingredients

  • 1 cup shelled pistachios, finely ground
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/2 cup coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder for dusting
  • Chopped pistachios for garnish

Instructions

  1. In a large mixing bowl, combine the ground pistachios, mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until smooth and creamy.
  2. In a shallow dish, mix the brewed espresso and coffee liqueur (if using).
  3. Dip each ladyfinger into the espresso mixture for just a second, ensuring not to soak them.
  4. Layer half of the dipped ladyfingers in the bottom of a 9×9 inch dish.
  5. Spread half of the pistachio mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  8. Before serving, dust with cocoa powder and garnish with chopped pistachios.

Notes

  • For a richer flavor, use freshly brewed espresso.
  • You can adjust the amount of sugar based on your sweetness preference.
