- 2 pounds of potatoes, peeled and cubed
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Hard-boiled eggs, chopped (optional)
Instructions
- In a large pot, cover the cubed potatoes with water and bring to a boil. Cook until fork-tender, about 10-15 minutes. Drain and let cool.
- In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Once the potatoes are cooled, add them to the bowl along with the celery, red onion, and parsley. Gently mix until everything is well coated.
- If desired, fold in the chopped hard-boiled eggs.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
