Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper.
  3. Rub the spice mixture all over the chicken breasts.
  4. Place the chicken in a baking dish and surround with cherry tomatoes and spinach.
  5. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  6. In the last 5 minutes of baking, sprinkle shredded mozzarella cheese on top of the chicken.
  7. Remove from oven and let rest for a few minutes before serving.
