- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper.
- Rub the spice mixture all over the chicken breasts.
- Place the chicken in a baking dish and surround with cherry tomatoes and spinach.
- Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- In the last 5 minutes of baking, sprinkle shredded mozzarella cheese on top of the chicken.
- Remove from oven and let rest for a few minutes before serving.
