- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 lemon, juiced
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Add chicken breasts to the skillet and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove chicken from the skillet and let rest for a few minutes.
- In the same skillet, add cherry tomatoes and spinach, cooking until the spinach is wilted.
- Squeeze lemon juice over the vegetables, and stir to combine.
- Slice the chicken breasts and serve over the sautéed vegetables, garnished with fresh parsley.
