Description

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Once the quinoa is cooked, fluff it with a fork and allow it to cool slightly before adding it to the vegetable mixture.
  5. Drizzle the dressing over the quinoa and vegetable mixture, and toss to combine.
  6. Serve immediately or refrigerate for up to 2 days.
