A flavorful Indian chicken curry that is rich in spices, served with soft naan and crispy fries for a satisfying meal.

- 2 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt, to taste
- Fresh cilantro, for garnish
- 4 naan breads
- 4 potatoes, cut into fries
- Oil for frying
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic and ginger; cook for another 2 minutes until fragrant.
- Add the chopped tomatoes and cook until they break down and become saucy.
- Stir in the curry powder, turmeric, cumin, and coriander. Cook for 1-2 minutes.
- Add the chicken pieces and cook until they’re browned on all sides.
- Pour in the coconut milk and bring to a simmer. Season with salt.
- Cover and cook for 25-30 minutes, or until the chicken is cooked through.
- Meanwhile, heat oil in a separate pan and fry the potato fries until golden and crispy.
- Warm the naan bread in a separate pan or oven.
- Serve the chicken curry hot, garnished with fresh cilantro, alongside soft naan and crispy fries.
Notes
- You can adjust the spice level by adding more or less curry powder.
- For a vegetarian option, substitute chicken with chickpeas or tofu.
