- 1 red onion, sliced

- 2 teaspoons chili powder

- Salt and pepper to taste
- Tortillas for serving
- Lime wedges for serving
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the shrimp, bell pepper, red onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
- Spread the mixture in a single layer on a sheet pan.
- Bake in the preheated oven for 10-12 minutes, or until the shrimp are cooked through and the vegetables are tender.
