Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper on all sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  3. Transfer the roast to the slow cooker. Add carrots, potatoes, onion, and garlic around the roast.
  4. In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour the mixture over the roast and vegetables.
  5. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender and easily shreds.
  6. Remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and cooking juices.

  • For extra flavor, you can add a splash of red wine to the broth mixture.
