- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions
- Season the chuck roast with salt and pepper on all sides.
- In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the roast to the slow cooker. Add carrots, potatoes, onion, and garlic around the roast.
- In a bowl, mix together the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour the mixture over the roast and vegetables.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender and easily shreds.
- Remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and cooking juices.
Notes
- For extra flavor, you can add a splash of red wine to the broth mixture.
- Feel free to add other vegetables like parsnips or mushrooms.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
