Ingredients

  • 1 pound ground beef (80/20 blend recommended)
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup pickles, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Heat a large skillet over medium-high heat and add a little cooking oil.
  2. Take a handful of ground beef (about 2 ounces) and form it into a ball. Place it in the hot skillet and smash it down with a spatula to create a thin patty. Season with salt and pepper.
  3. Cook the patty for about 2-3 minutes until a crust forms, then flip it and cook for another 1-2 minutes.
  4. Once cooked, place a small amount of cheese on top of the patty to melt.
  5. Remove the patty from the skillet and set it aside. Repeat with the remaining ground beef.
  6. In a separate pan, lightly toast the tortillas on both sides.
  7. To assemble, place a smash burger patty on each tortilla. Top with diced onions, tomatoes, pickles, and a drizzle of the sauce made from mayonnaise, ketchup, and mustard.
  8. Fold the tortillas over the filling and serve immediately.

Notes
