- 2 lbs boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup barbecue sauce
- 4 hamburger buns
- Coleslaw (for topping, optional)
Instructions
- Preheat your smoker to 225°F (107°C).
- In a bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture all over the chicken thighs.
- Place the chicken thighs in the smoker and smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the smoker and let it rest for 10 minutes.
- Shred the chicken using two forks and mix in the barbecue sauce.
- Toast the hamburger buns lightly on the grill or in a skillet.
- Assemble the sandwiches by placing a generous portion of the pulled chicken on each bun. Top with coleslaw if desired.
- Serve and enjoy!
Notes
- For an extra smoky flavor, add wood chips to your smoker.
- Feel free to adjust the amount of barbecue sauce to your liking.
