Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup barbecue sauce
  • 4 hamburger buns
  • Coleslaw (for topping, optional)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Rub the spice mixture all over the chicken thighs.
  4. Place the chicken thighs in the smoker and smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken from the smoker and let it rest for 10 minutes.
  6. Shred the chicken using two forks and mix in the barbecue sauce.
  7. Toast the hamburger buns lightly on the grill or in a skillet.
  8. Assemble the sandwiches by placing a generous portion of the pulled chicken on each bun. Top with coleslaw if desired.
  9. Serve and enjoy!

Notes

  • For an extra smoky flavor, add wood chips to your smoker.
