- 1 pound chorizo, casings removed
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1 cup diced tomatoes with green chilies (like Rotel)
- 1/2 cup cream cheese, softened
- 1/4 cup diced onion
- 1/4 cup diced jalapeños (optional)
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Preheat your smoker to 225°F (107°C).
- In a cast iron skillet over medium heat, cook the chorizo until browned and fully cooked. Drain excess fat.
- Add the diced onion and jalapeños to the skillet and cook until softened, about 3-4 minutes.
- Stir in the diced tomatoes, cream cheese, garlic powder, smoked paprika, salt, and pepper. Mix well until the cream cheese is melted and everything is combined.
- Remove from heat and stir in the Monterey Jack and cheddar cheese until melted and creamy.
- Transfer the skillet to the smoker and smoke for 30-45 minutes, or until bubbly and slightly browned on top.
- Remove from the smoker and let cool slightly before serving with tortilla chips.
Notes
- Feel free to customize with your favorite add-ins like black beans or corn.
- For extra smokiness, try adding a few wood chunks to your smoker.
