Ingredients

  • 1 pound chorizo, casings removed
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced tomatoes with green chilies (like Rotel)
  • 1/2 cup cream cheese, softened
  • 1/4 cup diced onion
  • 1/4 cup diced jalapeños (optional)
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a cast iron skillet over medium heat, cook the chorizo until browned and fully cooked. Drain excess fat.
  3. Add the diced onion and jalapeños to the skillet and cook until softened, about 3-4 minutes.
  4. Stir in the diced tomatoes, cream cheese, garlic powder, smoked paprika, salt, and pepper. Mix well until the cream cheese is melted and everything is combined.
  5. Remove from heat and stir in the Monterey Jack and cheddar cheese until melted and creamy.
  6. Transfer the skillet to the smoker and smoke for 30-45 minutes, or until bubbly and slightly browned on top.
  7. Remove from the smoker and let cool slightly before serving with tortilla chips.

Notes

  • Feel free to customize with your favorite add-ins like black beans or corn.
  • For extra smokiness, try adding a few wood chunks to your smoker.
