Ingredients

  • 10 tomatillos, husked and halved
  • 1 medium onion, quartered
  • 2 jalapeño peppers, halved
  • 4 cloves garlic, unpeeled
  • 1/2 cup fresh cilantro leaves
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Place the tomatillos, onion, jalapeños, and garlic directly on the smoker racks.
  3. Smoke the vegetables for about 1 hour or until they are tender and slightly charred.
  4. Remove the vegetables from the smoker and allow them to cool slightly.
  5. Peel the garlic cloves and add all the smoked vegetables to a blender or food processor.
  6. Add the cilantro, lime juice, and salt to the blender.
  7. Blend until you reach your desired consistency, either smooth or chunky.
  8. Taste and adjust seasoning if necessary.
  9. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.

Notes

  • For a spicier salsa, keep the seeds in the jalapeños.
  • You can also roast the vegetables in the oven if you don’t have a smoker.
