Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the buttermilk and stir until just combined. Do not overmix.
  5. Turn the dough onto a floured surface and gently knead 2-3 times. Pat into a 1-inch thick rectangle.
  6. Cut out biscuits using a biscuit cutter and place on a baking sheet.
  7. Bake for 12-15 minutes until golden brown.
  8. While the biscuits are baking, prepare the gravy. In a skillet over medium heat, cook the sausage until browned.
  9. Sprinkle the 1/4 cup of flour over the sausage and stir to combine.
  10. Slowly add the milk, stirring constantly until the gravy thickens. Season with black pepper and additional salt if needed.
  11. Serve the hot biscuits topped with the sausage gravy.
