Instructions
- Preheat the oven to 450°F (230°C).
- In a large bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the buttermilk and stir until just combined. Do not overmix.
- Turn the dough onto a floured surface and gently knead 2-3 times. Pat into a 1-inch thick rectangle.
- Cut out biscuits using a biscuit cutter and place on a baking sheet.
- Bake for 12-15 minutes until golden brown.
- While the biscuits are baking, prepare the gravy. In a skillet over medium heat, cook the sausage until browned.
- Sprinkle the 1/4 cup of flour over the sausage and stir to combine.
- Slowly add the milk, stirring constantly until the gravy thickens. Season with black pepper and additional salt if needed.
- Serve the hot biscuits topped with the sausage gravy.
