Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tablespoons white miso paste
  • 1 tablespoon red miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili paste (adjust to taste)
  • 2 packs of ramen noodles (fresh or dried)
  • 2 soft-boiled eggs, halved
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup baby spinach
  • 1 green onion, chopped
  • Nori sheets, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the sliced mushrooms and sauté until tender.
  2. Pour in the chicken or vegetable broth and bring to a simmer.
  3. Whisk in the white miso paste, red miso paste, soy sauce, and chili paste until fully dissolved.
  4. Add the ramen noodles to the pot and cook according to package instructions until al dente.
  5. In the last minute of cooking, stir in the baby spinach until wilted.
  6. Serve the ramen in bowls, topped with halved soft-boiled eggs, chopped green onions, nori sheets, and a sprinkle of sesame seeds.

Notes
