- 12 oz Pasta
- 2 tbsp Olive oil
- 3 cloves Garlic
- 1 tsp Crushed red pepper flakes
- 2 tbsp Tomato paste
- 1/2 cup Vodka
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh basil
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Stir in the tomato paste and cook for another minute, mixing well.
- Pour in the vodka and allow it to simmer for about 5 minutes, reducing slightly.
- Lower the heat and add the heavy cream, stirring until the sauce is smooth and creamy.
- Mix in the grated Parmesan cheese, and season with salt and black pepper to taste.
- Add the cooked pasta to the sauce, tossing to coat evenly.
- Garnish with fresh basil before serving.
