- 1 lb flank steak
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens (arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/2 cup blue cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat grill to medium-high heat.
- Rub the flank steak with olive oil, and season generously with salt and pepper.
- Grill the steak for about 5-7 minutes per side, or until it reaches your desired level of doneness. Remove from grill and let it rest for 5 minutes.
- While the steak is resting, prepare the salad by combining mixed greens, cherry tomatoes, red onion, and avocado in a large bowl.
- Slice the rested steak against the grain into thin strips and add it to the salad.
- Sprinkle blue cheese on top and drizzle with balsamic vinaigrette.
- Toss gently to combine and serve immediately.
