Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in the sour cream until smooth.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is set and the edges are lightly browned. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight.
  8. Before serving, top with sliced strawberries and warm strawberry jam for glaze.

Notes

  • For a smoother texture, make sure the cream cheese is at room temperature before mixing.
  • You can use a water bath to prevent cracking.
