A creamy and delicious strawberry cheesecake that’s perfect for any occasion.

- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until combined.
- Add eggs one at a time, mixing well after each addition. Stir in the sour cream until smooth.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and the edges are lightly browned. Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight.
- Before serving, top with sliced strawberries and warm strawberry jam for glaze.
Notes
- For a smoother texture, make sure the cream cheese is at room temperature before mixing.
- You can use a water bath to prevent cracking.
- Store leftovers in the refrigerator for up to 5 days.
