  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/4 cup graham cracker crumbs
  • Oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Fold in the diced strawberries gently into the cream cheese mixture.
  3. Lay a spring roll wrapper on a clean surface and add about 2 tablespoons of the cheesecake filling to the center.
  4. Sprinkle a little graham cracker crumbs on top of the filling.
  5. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, sealing the edges with a little water.
  6. Repeat the process with the remaining wrappers and filling.
  7. In a deep pan, heat oil over medium heat for frying.
  8. Carefully place the spring rolls in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
  9. Remove from oil and drain on paper towels.
  10. Dust with powdered sugar before serving, if desired.
