- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- 1/4 cup graham cracker crumbs
- Oil for frying
- Powdered sugar for dusting (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Fold in the diced strawberries gently into the cream cheese mixture.
- Lay a spring roll wrapper on a clean surface and add about 2 tablespoons of the cheesecake filling to the center.
- Sprinkle a little graham cracker crumbs on top of the filling.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, sealing the edges with a little water.
- Repeat the process with the remaining wrappers and filling.
- In a deep pan, heat oil over medium heat for frying.
- Carefully place the spring rolls in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving, if desired.

- For a healthier option, you can bake the spring rolls at 375°F (190°C) for 15-20 minutes until golden brown instead of frying.
