Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar, divided
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. In a medium bowl, combine the strawberries and 1/2 cup of sugar. Stir to coat the strawberries in sugar and let sit for about 30 minutes until they release their juices.
  2. Using a fork or a potato masher, mash the strawberries until you reach your desired consistency (smooth or chunky).
  3. In a separate large bowl, whisk together the remaining sugar, heavy cream, whole milk, vanilla extract, and lemon juice until the sugar is dissolved.
  4. Fold the mashed strawberries into the cream mixture until well combined.
  5. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  6. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
