- 2 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar, divided
- 2 cups heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- In a medium bowl, combine the strawberries and 1/2 cup of sugar. Stir to coat the strawberries in sugar and let sit for about 30 minutes until they release their juices.
- Using a fork or a potato masher, mash the strawberries until you reach your desired consistency (smooth or chunky).
- In a separate large bowl, whisk together the remaining sugar, heavy cream, whole milk, vanilla extract, and lemon juice until the sugar is dissolved.
- Fold the mashed strawberries into the cream mixture until well combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
