- 2 cups fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar (adjust based on sweetness of strawberries)
- 1 cup coconut water or water
- 1 tablespoon lemon juice
Instructions
- In a blender, combine the chopped strawberries, sugar, coconut water (or water), and lemon juice.
- Blend until smooth. Taste and adjust sweetness if necessary.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert the popsicle sticks and freeze for at least 4-6 hours or until solid.
- To remove popsicles, run warm water over the outside of the molds for a few seconds until they release.
Notes
- For a creamier popsicle, you can add a splash of coconut milk.
- Feel free to mix in other fruits like bananas or blueberries for added flavor.
- These popsicles can be stored in the freezer for up to 2 months.
