This creamy and flavorful street corn dip is inspired by the popular Mexican street food, elote. Perfect for parties or as a snack, this dip combines charred corn, creamy cheese, and spices for a delicious treat.


Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup crumbled queso fresco or feta cheese
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Tortilla chips, for serving

Instructions

  1. In a skillet over medium-high heat, add olive oil and corn. Cook until the corn is charred and slightly caramelized, about 5-7 minutes.
  2. In a large bowl, combine the charred corn, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  3. Add cream cheese, sour cream, mayonnaise, queso fresco, cilantro, and lime juice to the corn mixture. Stir until well combined and creamy.
  4. Transfer the dip to a serving dish and garnish with additional cilantro and crumbled queso fresco, if desired.
  5. Serve with tortilla chips for dipping.
