This creamy and flavorful street corn dip is inspired by the popular Mexican street food, elote. Perfect for parties or as a snack, this dip combines charred corn, creamy cheese, and spices for a delicious treat.

- 2 cups corn kernels (fresh or frozen)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup crumbled queso fresco or feta cheese
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Tortilla chips, for serving
Instructions
- In a skillet over medium-high heat, add olive oil and corn. Cook until the corn is charred and slightly caramelized, about 5-7 minutes.
- In a large bowl, combine the charred corn, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
- Add cream cheese, sour cream, mayonnaise, queso fresco, cilantro, and lime juice to the corn mixture. Stir until well combined and creamy.
- Transfer the dip to a serving dish and garnish with additional cilantro and crumbled queso fresco, if desired.
- Serve with tortilla chips for dipping.
