Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup diced cucumbers
  • 1 cup crumbled feta cheese
  • 1 teaspoon garlic powder

Instructions

  1. In a large bowl, combine the corn, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and pepper.
  3. Pour the dressing over the corn mixture and stir until well combined.
  4. Gently fold in the diced cucumbers and feta cheese.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This dish can be made a day ahead of time for flavors to meld.
  • Feel free to add other vegetables like bell peppers or zucchini.
  • For a spicy kick, add diced jalapeños.
