Instructions
- In a large bowl, combine the corn, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and pepper.
- Pour the dressing over the corn mixture and stir until well combined.
- Gently fold in the diced cucumbers and feta cheese.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This dish can be made a day ahead of time for flavors to meld.
- Feel free to add other vegetables like bell peppers or zucchini.
- For a spicy kick, add diced jalapeños.
