Instructions
- Preheat the oven to 250°F (120°C) if making pavlova from scratch.
- In a large bowl, combine fresh berries and sugar. Let them macerate for about 30 minutes.
- If making pavlova, beat egg whites until soft peaks form, gradually add sugar until stiff peaks form, then gently fold in lemon zest.
- Shape pavlova on a parchment-lined baking sheet and bake for 1.5 hours. Let cool completely.
- Once pavlova is cool, top each shell with whipped cream and a generous amount of the berry mixture.
- Garnish with fresh mint leaves before serving.
