Description

A refreshing and vibrant soup made with fresh summer peas and mint, perfect for warm days.


Ingredients

  • 4 cups fresh or frozen peas
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup fresh mint leaves, plus extra for garnish
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the peas to the pot and stir for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Remove from heat and add the fresh mint leaves. Let cool slightly.
  5. Using an immersion blender, blend the soup until smooth. If using a regular blender, blend in batches.
  6. Return the soup to the pot and heat gently. If desired, stir in the heavy cream.
  7. Season with salt and pepper to taste. Serve warm or chilled, garnished with extra mint leaves.

Notes

  • For a lighter version, omit the heavy cream.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Serve with crusty bread for a complete meal.
