Description
A refreshing and vibrant soup made with fresh summer peas and mint, perfect for warm days.
Ingredients

- 4 cups fresh or frozen peas
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup fresh mint leaves, plus extra for garnish
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the peas to the pot and stir for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Remove from heat and add the fresh mint leaves. Let cool slightly.
- Using an immersion blender, blend the soup until smooth. If using a regular blender, blend in batches.
- Return the soup to the pot and heat gently. If desired, stir in the heavy cream.
- Season with salt and pepper to taste. Serve warm or chilled, garnished with extra mint leaves.
Notes
- For a lighter version, omit the heavy cream.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Serve with crusty bread for a complete meal.
