- 8 ounces soba noodles
- 1 cup shelled edamame (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1 bell pepper, thinly sliced
- 1/4 cup chopped green onions
- 1/4 cup cilantro, chopped
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Cook soba noodles according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked soba noodles, edamame, cherry tomatoes, cucumber, bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and sesame seeds.
- Pour the dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
