A delicious and rustic Summer Stone Fruit Galette made with fresh stone fruits, wrapped in a flaky pastry crust.
Ingredients

- 2 cups mixed stone fruits (peaches, plums, cherries, etc.), pitted and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 pre-made pie crust
- 1 egg, beaten (for egg wash)
- Coarse sugar for sprinkling
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced stone fruits, granulated sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss gently to coat the fruit evenly.
- Roll out the pie crust on a floured surface to about 12 inches in diameter. Transfer to a baking sheet lined with parchment paper.
- Spoon the fruit mixture into the center of the pie crust, leaving about a 2-inch border around the edges.
- Fold the edges of the crust over the fruit, pleating as you go to create a rustic look.
- Brush the edges of the crust with the beaten egg and sprinkle coarse sugar over the crust.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the fruit is bubbly.
