Description
This tender chuck roast is slow-cooked to perfection in the oven and served with crispy roasted potatoes and rich gravy, making for a comforting and satisfying meal.

- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 4 large potatoes, cut into wedges
- 2 tablespoons butter, melted
- 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon cornstarch (optional, for thickening gravy)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 325°F (163°C).
- In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt, pepper, garlic powder, and onion powder.
- Sear the chuck roast in the pot for about 4-5 minutes on each side until browned. Remove the roast and set it aside.
- In the same pot, add the beef broth and Worcestershire sauce, scraping any brown bits from the bottom of the pot.
- Return the chuck roast to the pot, cover with a lid, and place it in the preheated oven. Cook for about 3 hours, or until the roast is tender.
- While the roast is cooking, prepare the potatoes. In a large bowl, mix the potato wedges with melted butter, rosemary, salt, and pepper.
- After 2 hours of roasting the chuck roast, add the potato wedges around the roast in the pot. Continue cooking for the last hour.
- Once the roast is tender and potatoes are crispy, remove the pot from the oven. Let the roast rest for 10-15 minutes before slicing.
- For the gravy, if desired, mix cornstarch with a little water to create a slurry. Bring the remaining liquid in the pot to a simmer, then stir in the slurry to thicken.
- Serve the sliced chuck roast with crispy roasted potatoes and drizzle with gravy. Garnish with fresh parsley.
Notes
- For extra flavor, you can add carrots and onions to the pot with the roast.
- If you prefer, you can use a slow cooker instead of the oven. Cook on low for 8 hours.
