Tender Chuck Roast in the Oven with Crispy Potatoes

Description

This tender chuck roast is slow-cooked to perfection in the oven and served with crispy roasted potatoes and rich gravy, making for a comforting and satisfying meal.


Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 large potatoes, cut into wedges
  • 2 tablespoons butter, melted
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon cornstarch (optional, for thickening gravy)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt, pepper, garlic powder, and onion powder.
  3. Sear the chuck roast in the pot for about 4-5 minutes on each side until browned. Remove the roast and set it aside.
  4. In the same pot, add the beef broth and Worcestershire sauce, scraping any brown bits from the bottom of the pot.
  5. Return the chuck roast to the pot, cover with a lid, and place it in the preheated oven. Cook for about 3 hours, or until the roast is tender.
  6. While the roast is cooking, prepare the potatoes. In a large bowl, mix the potato wedges with melted butter, rosemary, salt, and pepper.
  7. After 2 hours of roasting the chuck roast, add the potato wedges around the roast in the pot. Continue cooking for the last hour.
  8. Once the roast is tender and potatoes are crispy, remove the pot from the oven. Let the roast rest for 10-15 minutes before slicing.
  9. For the gravy, if desired, mix cornstarch with a little water to create a slurry. Bring the remaining liquid in the pot to a simmer, then stir in the slurry to thicken.
  10. Serve the sliced chuck roast with crispy roasted potatoes and drizzle with gravy. Garnish with fresh parsley.

Notes

  • For extra flavor, you can add carrots and onions to the pot with the roast.
  • If you prefer, you can use a slow cooker instead of the oven. Cook on low for 8 hours.
