Tender Pressure Cooker Chicken Breast with Creamy Potatoes

A quick and easy recipe for tender and juicy chicken breasts cooked in a pressure cooker, served alongside creamy buttery mashed potatoes.


Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 pounds potatoes
  • 4 tablespoons butter
  • 1/2 cup milk
  • to taste additional salt

Instructions

  1. Season the chicken breasts with salt, black pepper, and garlic powder.
  2. In the pressure cooker, heat olive oil over medium heat. Add the chicken breasts and sear until golden brown, about 3-4 minutes per side.
  3. Pour in the chicken broth and close the lid of the pressure cooker. Cook on high pressure for 8 minutes.
  4. While the chicken is cooking, peel and chop the potatoes. Place them in a pot of boiling salted water and cook until tender, about 15-20 minutes.
  5. Once the chicken has finished cooking, release the pressure and remove the chicken breasts. Let them rest for a few minutes.
  6. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Add additional salt to taste.
  7. Serve the chicken breasts with the buttery mashed potatoes on the side.

Notes

  • For extra flavor, you can marinate the chicken breasts in your favorite marinade for a few hours before cooking.
  • Feel free to add garlic or herbs to the mashed potatoes for added flavor.
