A quick and easy recipe for tender and juicy chicken breasts cooked in a pressure cooker, served alongside creamy buttery mashed potatoes.

- 4 pieces chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup chicken broth
- 2 tablespoons olive oil
- 2 pounds potatoes
- 4 tablespoons butter
- 1/2 cup milk
- to taste additional salt
Instructions
- Season the chicken breasts with salt, black pepper, and garlic powder.
- In the pressure cooker, heat olive oil over medium heat. Add the chicken breasts and sear until golden brown, about 3-4 minutes per side.
- Pour in the chicken broth and close the lid of the pressure cooker. Cook on high pressure for 8 minutes.
- While the chicken is cooking, peel and chop the potatoes. Place them in a pot of boiling salted water and cook until tender, about 15-20 minutes.
- Once the chicken has finished cooking, release the pressure and remove the chicken breasts. Let them rest for a few minutes.
- Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Add additional salt to taste.
- Serve the chicken breasts with the buttery mashed potatoes on the side.
Notes
- For extra flavor, you can marinate the chicken breasts in your favorite marinade for a few hours before cooking.
- Feel free to add garlic or herbs to the mashed potatoes for added flavor.
