  • 1/4 cup kosher salt
  • 1/4 cup black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper (optional, for heat)
  • Wood chips for smoking (hickory or oak recommended)
  • Barbecue sauce (optional, for serving)

Instructions

  1. Prepare the brisket by trimming excess fat, leaving about 1/4 inch for flavor.
  2. In a bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using) to create the rub.
  3. Rub the spice mixture all over the brisket, ensuring it’s well coated on all sides. Wrap in plastic wrap and refrigerate for at least 12 hours, preferably 24 hours.
  4. Preheat your smoker to 225°F (107°C). Add wood chips to the smoker according to manufacturer instructions.
  5. Place the brisket in the smoker, fat side up, and smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C) to 205°F (96°C).
  6. Once the brisket reaches the desired temperature, remove it from the smoker and wrap it in butcher paper or aluminum foil.
  7. Let the brisket rest for at least 30 minutes before slicing to allow the juices to redistribute.
  8. Slice against the grain and serve with barbecue sauce if desired.
