- 1 whole beef brisket (about 10–12 pounds)
- 1/4 cup kosher salt
- 1/4 cup black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper (optional, for heat)
- Wood chips for smoking (hickory or oak recommended)
- Barbecue sauce (optional, for serving)
Instructions
- Prepare the brisket by trimming excess fat, leaving about 1/4 inch for flavor.
- In a bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using) to create the rub.
- Rub the spice mixture all over the brisket, ensuring it’s well coated on all sides. Wrap in plastic wrap and refrigerate for at least 12 hours, preferably 24 hours.
- Preheat your smoker to 225°F (107°C). Add wood chips to the smoker according to manufacturer instructions.
- Place the brisket in the smoker, fat side up, and smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C) to 205°F (96°C).
- Once the brisket reaches the desired temperature, remove it from the smoker and wrap it in butcher paper or aluminum foil.
- Let the brisket rest for at least 30 minutes before slicing to allow the juices to redistribute.
- Slice against the grain and serve with barbecue sauce if desired.

- For the best flavor, use high-quality brisket and let it absorb the rub for at least 12 hours.
- Experiment with different types of wood for smoking to find your preferred flavor.
- If you don’t have a smoker, you can use an oven at a low temperature with a wood chip box.
