Description
A refreshing summer salad that combines ripe tomatoes, juicy peaches, fresh mozzarella, and a drizzle of homemade basil oil.
Ingredients

- 4 medium ripe tomatoes, sliced
- 2 ripe peaches, sliced
- 8 oz fresh mozzarella, sliced
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- 1 cup fresh basil leaves (for basil oil)
- 1/2 cup extra-virgin olive oil
- 1 garlic clove, minced
- 1 teaspoon lemon juice
Instructions
- To make the basil oil, combine the basil leaves, olive oil, garlic, and lemon juice in a blender. Blend until smooth. Strain through a fine mesh sieve if desired.
- On a large platter, arrange the tomato slices and peach slices, alternating them.
- Layer the mozzarella slices between the tomato and peach slices.
- Drizzle the basil oil over the salad.
- Sprinkle with salt and pepper to taste.
- Garnish with fresh basil leaves.
- Serve immediately.
