Description

A refreshing summer salad that combines ripe tomatoes, juicy peaches, fresh mozzarella, and a drizzle of homemade basil oil.


Ingredients

  • 4 medium ripe tomatoes, sliced
  • 2 ripe peaches, sliced
  • 8 oz fresh mozzarella, sliced
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • 1 cup fresh basil leaves (for basil oil)
  • 1/2 cup extra-virgin olive oil
  • 1 garlic clove, minced
  • 1 teaspoon lemon juice

Instructions

  1. To make the basil oil, combine the basil leaves, olive oil, garlic, and lemon juice in a blender. Blend until smooth. Strain through a fine mesh sieve if desired.
  2. On a large platter, arrange the tomato slices and peach slices, alternating them.
  3. Layer the mozzarella slices between the tomato and peach slices.
  4. Drizzle the basil oil over the salad.
  5. Sprinkle with salt and pepper to taste.
  6. Garnish with fresh basil leaves.
  7. Serve immediately.
