Ingredients

  • 2 medium, peeled and diced Sweet Potatoes
  • 1 can, drained and rinsed Black Beans
  • 1 cup, frozen or canned Corn
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 4 small, whole wheat Tortillas
  • 1 cup, shredded (optional) Cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, cumin, paprika, and salt.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, until tender.
  4. In a pan, combine the roasted sweet potatoes, black beans, and corn. Mix well and heat until warmed through.
  5. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  6. Fill each tortilla with the sweet potato mixture and sprinkle with cheese if desired.
  7. Roll up the tortillas and serve warm.
