Ingredients

- 2 medium, peeled and diced Sweet Potatoes
- 1 can, drained and rinsed Black Beans
- 1 cup, frozen or canned Corn
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Salt
- 4 small, whole wheat Tortillas
- 1 cup, shredded (optional) Cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, cumin, paprika, and salt.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, until tender.
- In a pan, combine the roasted sweet potatoes, black beans, and corn. Mix well and heat until warmed through.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Fill each tortilla with the sweet potato mixture and sprinkle with cheese if desired.
- Roll up the tortillas and serve warm.
