  • 1/2 cup cold water
  • 1 cup dark chocolate, chopped
  • 1 egg, beaten (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar.
  2. Add cold, cubed butter to the flour mixture. Using a pastry cutter or your hands, mix until the mixture resembles coarse crumbs.
  3. Slowly add cold water, mixing until the dough comes together. Do not overmix.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. On a lightly floured surface, roll out the dough into a rectangle. Fold it into thirds like a letter, then roll it out again into a rectangle. Repeat this process two more times.
  6. Cut the dough into triangles. Place a piece of chocolate at the wide end of each triangle and roll it up tightly.
  7. Place the rolled croissants on a baking sheet lined with parchment paper. Brush with beaten egg.
  8. Preheat your oven to 400°F (200°C) and bake croissants for 15-20 minutes or until golden brown.
  9. Let cool slightly before dusting with powdered sugar and serving.

Notes

  • For a richer flavor, you can mix in a little vanilla extract into the dough.
  • Make sure your butter is very cold for the best flaky texture.
